How is your Monday going? I feel strange….Today is Luca’s first day at daycare. It is so weird being at home without him. I know he is in great hands but I’d be lying if I said I wasn’t sad. Usually when he wakes up in the mornings I try to see if he will fall back asleep. Well, this morning I woke right up and snuggled with him knowing we would be apart most of the day. I miss him SO much but I know he is having fun socializing with other kids.
Did you have fun watching the Superbowl? I barely watched the game but did my fair share of eating. I made this Snickers Chex Mix via Iowa Girl Eats that was insanely delicious. Seriously addictive stuff.
Have you tried chia seed pudding yet? I recently made a version with raspberry yogurt, mixed berries and almonds. I enjoyed it for breakfast but it would also make a great dessert! I love the color too. Perfect for Valentine’s day. You can find the recipe on my recipe page, or here!
Another recent meal I ate was spicy sausage, kale and tortellini soup (click link for recipe). This soup was in one of my past meal plans and adapted from this version. It’s comforting and has a little bit of everything. Kale for veggie lovers, cheese tortellini for carb lovers and turkey sausage for meat lovers. Chris even ate the kale in this soup! That’s a big accomplishment 🙂
Last week I made a batch of almond & kale pesto (click link for recipe), also from one of my past meal plans. I served the pesto with mahi mahi, roasted sweet potatoes and green beans. It also tastes delicious with pasta.
The recipe makes a lot! I froze the leftover pesto in an ice cube tray. Once the cubes were frozen, I popped them out and placed them in a freezer bag for future use.
Finally, I have a new meal plan ready. This week is different as it is only dinners. Most people stick to routine breakfasts and lunches so from now on I will only be planning dinners. I will still be posting breakfast, snack and lunch recipes here on the blog though to give you ideas.
